Jam Jams & Butterscotch Pie

Jam Jams:


Cream together:

1 cup shortening

1 cup brown sugar

Add:

1 egg

1 tsp vanilla

1⁄2 tsp. salt

1⁄4 cup maple syrup


1 tbsp. soda dissolved in 1 tbsp hot


water

Fold in:

2 1⁄2 cups of flour


Mix well. Roll out in your favourite

cutters and put together with jam of

your choice in the centre.

Helen says: Bake at 350 degrees F

until they start to brown and look

done (not sure of the time).


Butterscotch Pie


3⁄4 cup brown sugar

2 egg yolks mixed with 2 tbsp cornstarch

Heaping tbsp butter

2 cups 1⁄2 and 1⁄2 cream

1 tsp vanilla

Mix together. Cook over medium heat until

thick and bubbly stirring constantly.

Remove from heat

after 30 seconds and let stand a few

minutes. Pour into baked pie shell and top

with meringue or

whipped cream.
